special baked beans

This is baked beans with stuff added. The variations are endless. It's a great basis for a quick nutritious meal for all ages. You start with baked beans, add something green and leafy (good to include in any meal), add any tasty bits that don't need much cooking or are already cooked, heat through and you have a meal in minutes!

Ingredients

  • can of baked beans
  • 1-2 onions, chopped and fried
  • handful of frozen peas
  • cup of frozen spinach or chopped fresh watercress
  • chopped vegan sausages or hot dogs (e.g. Fry's or Taifun)
  • 1 chopped tomato
  • chopped Cheezly or other vegan cheese

Method

  • Mix all together.
  • If using a microwave, put in microwave-proof dish with a loosely fitting lid and cook on full power for a few minutes, stirring occasionally.
  • If using a hob, put in a pan and heat gently, stirring occasionally. You can start to heat the beans up whilst chopping and adding all ingredients.

Notes

Aparatus needed: tin opener, bowl or pan, sharp knife, stirrer.

Kids enjoy making and eating this dish - they just need help with the hot bits.
