Soup plus plus

like the special baked beans, this recipe has endless variations and is a quick cheat to a tasty meal in minutes.

You could serve it with bread, or even use it as a sauce for rice or pasta.

Ingredients

  • 1 tin of vegan soup (Suma Pea Soup is the best)
  • 1-2 handfuls of fresh or frozen spinach (can defrost in the soup whilst heating it, just takes longer)
  • 3-6 sprigs of chopped fresh coriander or basil leaves
  • chopped vegan sausages, or tofu chunks or tin of chickpeas or cashew nuts - if a main dish

Method

  • Mix all together in a pan and heat thoroughly. Add the fresh herbs last.
  • If using a microwave, mix in a microwave proof dish, heat for 3 minutes, stir and add herbs, then heat for 1-3 minutes longer, depending on spinach defrosting needs and quantities.
  • Serve piping hot as it is or with bread, pasta, rice, mashed potato, cous cous or whatever.

Notes

Althernative or additional things to add include frozen peas, any left overs (including cooked rice/lentils/potato), greens, even lettuce - limp lettuce is fine cooked.

So healthy things to buy in to help with quick food or jazz up a tin of something include watercress, fresh herbs, fresh greens (chop small), spring onions, spices, salad veg, rice noodles
