lettuce wraps

You can chop up whatever you fancy for these - just chop it up small. The basic idea is to make it like the Chinese starter.

Ingredients

  • iceburg lettuce
  • red bell pepper
  • tofu (marinated or smoked is ideal)
  • spring onion
  • sweetcorn kernels (drained)
  • fresh coriander leaves
  • tamari (or soya sauce)

Method

  • Carefully separate lettuce leaves so each is as intact as possible, and pile on a plate. Discard badly broken leaves for an alternate use.
  • Finely chop pepper, tofu, spring onion and coriander leaves and mix together. Sprinkle lightly with tamari or soya sauce.
  • Everyone serves themselves by spooning some of the lix into the middle of a lettuce leaf, rolling it up and eating it.
  • This is rather messy, so providing finder bowls and napkins is a good idea.

Notes

This recipe is gluten free and more tasty if you use tamari (which is a full flavoured rich Japanese soya sauce), rather than a standard soya sauce.
