Happy Kids Salad

Kids are much more likely to enjoy food they make, especially if they have a say in the ingredients. A salad is a great starting dish to learn on, and most kids like raw veg better than cooked. Excellent for adults and beginner chefs of all ages! Grated salads seem more special and are easier to eat.

Ingredients

  • 1 small to medium lettuce of a sweet-tasting variety, such as iceberg or romain hearts, or half a pointy cabbage
  • 3 carrots
  • 1 apple
  • 10 cm of cucumber
  • 6 button mushrooms
  • 1 handful of raisins (more if you have kiddie hands)

Method

  • if using lettuce, wash, drain and break into pieces and line a salad bowl with it.
  • if using pointy cabbage, roughly chop it in a food processor and spread across the base of a salad bowl
  • place all other ingredients, except the raisins, in a food processor until grated texture, and add to the salad bowl. If you want more of a layered salad in a glass bowl, then process the ingredients separately and layer with alternating colours
  • sprinkle with raisins

Notes

Buy the fresh fruit and veg from an organic veg box scheme or a local fruit and veg stall to make it much cheaper and usually fresher than from a supermarket.
