A simple sugar-free recipe to do something different with your apples.

An elegant little dessert, served with sliced strawberry garnish, or even good for delighting an older baby, from about 9 months old, if okay with nuts.

I've selected a photo by the legendary Quintana Roo for this one, giving an idea of the sort of creation you could build from this, such as with nuts, crumbled biscuits and chocolate dairy-free ice cream.

And in looking for a picture on flickr for a vegan strawberry mousse I also came across a recipe for a vegan strawberry mousse cake which looks amazing, by juanelos, which you can recreate if you read the recipe in Spanish.

Ingredients

  • 2 cooking apples, or 3-4 eating apples
  • 1 teaspoon of mixed spice
  • half cup of cashew nuts
  • 1 cup dessicated/shredded coconut
  • 6 strawberries
  • 3 cups Kara alternative to dairy milk, or rice milk
  • 6 tsp arrowroot

Method

  • Core and chop the apples with the skin on, and cook over gentle heat in a saucepan with a touch of water and the mixed spice until soft.
  • Meanwhile, blend the nuts, coconut, strawberries and 1 cup of Kara or rice milk to a smooth thick mixture, then blend in the cooked apple.
  • Also, in a small pan, mix a little of the remaining milk into a paste with the arrowroot, then mix in the rest of the milk and heat until boiling, stirring frequently.
  • Once boiled remove from heat and mix thoroughly with the blender mixture.
  • Decant into individual ramekins or glasses, or into a serving bowl, and either eat immediately or chill for a few hours until needed.
  • To serve, decorate with sliced strawberries and a sprinkle of dessicate coconut.

Notes

I invented this recipe the very first time I used arrowroot, and Kara was also new to me. The latter's sweet coconut taste is ideal for a dessert, but you could use any alternative to dairy milk.
